We at the school of sugar feel that there is a need to pass on this knowledge to up and coming chefs and pastry chefs. over the years trends have changed with the use of isomalt becoming a popular alternative to sugar. both mediums are used on our five day classes.
All the basic techniques are demonstrated during your time with us, and I believe with this knowledge and practice you will be able to produce decorations to tantalise your customers and give yourself a great deal of satisfaction with your new found skills.
Course CM1 - - Length of course: 5 days - £800.00

Course CM1 covers all aspects of sugar pulling and blowing. It introduces you to the most important aspects of the art. Your five days of tuition begins with the primary technique of boiling and pulling sugar. You will learn to make various items: flowers, a pulled sugar ribbon, a woven basket, blown sugar swans, doves and fruit. Techniques such as rock sugar and bubble sugar will be demonstrated together with the explanation of poured sugar. Ultimately you will create a figurine incorporating all the skills you will have learnt during the course. Although we only use sugar on this course, Isomalt is always in stock and its use and benefits to a busy chef will be explained.
This course is based on the five day CM1 course, and is designed for students with limited time available to attend a class, so is easier for students to organise the time off from their employer. Isomalt will be used on this class, pulling flowers and ribbons, blowing a swan and doves. Preparing the isomalt and bubble sugar will also be covered. The contents of the course may vary with fish and star fish being covered rather than one of the other subjects.

Please note - all the Isomalt will be pre-prepared on the themed class, if you need to learn the preparation of the Isomalt you should attend the one day Beginners class.
A menu of sugar decorations is available covering celebration, sporting and seasonal subjects.
Bespoke decorations can be undertaken on request.
